Kindeng Mill Natural is a rare naturally processed Papua New Guinea coffee from the Western Highlands (1520–1770 MASL), made up of cherries purchased from around 1,500 smallholders across the Kindeng and Arufa municipalities. Ripe cherry is hand-sorted, then dried on raised beds and canvasses for roughly 3–4 weeks, moved repeatedly each day to drive even curing and a clean, stable cup. Expect cacao and dark chocolate depth with jammy, cooked passionfruit character, carried by tangy acidity and syrupy sweetness. A community-select lot of Arusha, Bourbon, and Typica that drinks like something far more singular than its scale.
